Who doesn’t love Stars Wars? Then bring in the idea of baking gingerbread cookies. I’m sold! I’m a mom of boys. Anything that involves Star Wars, lasers, space or Kung Fu, my boys are on board. So when I stretched out one of my gingerbread men, I was amazed at what I saw. This is where the Wookiee cookies came from. The recipe is fairly simple to throw together and only requires 30 mins to chill the dough. In my family, this is a must. If you have to wait longer than that, my boys have lost interest. So add a little Star Wars cheer in your Christmas baking this year.
Wookiee Cookies

Cook Time: 10 mins
Total Time: 55 mins
Yield: About 30 cookies
Ingredients:
1/2 cup of butter, softened
3/4 cup of brown sugar, packed
1/3 cup of molasses
1 egg
2 Tbsp of water
2 2/3 cups of all-purpose flour
3 tsp of baking powder
1/2 tsp of salt
2 tsp of ground ginger
1/2 tsp of ground cinnamon
1/2 tsp of ground nutmeg
1/2 tsp of ground allspice
Frosting:
1/3 cup of dark chocolate chips
1 tsp of coconut oil
1/2 cup of powdered sugar
1-2 tsp of water
Directions:
Cream butter and brown sugar until light and fluffy. Beat in molasses, egg and water. In another bowl, whisk together flour, baking powder, salt, ginger, cinnamon, nutmeg, and allspice. Gradually beat dry mixture into creamed mixture. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate until easy to handle, about 30 minutes.
Preheat oven to 350 degrees. On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 3-4-in. gingerbread man cookie cutter. Slightly stretch out cookie dough cut out to make body longer. Place 2 in. apart on baking sheets lined with parchment paper. With a butter knife, make marks in the cookies for eyes, nose, and fur.

Bake until edges are firm, 8-10 minutes. Remove to wire racks to cool completely.
To make frosting, melt chocolate chips and coconut oil together. Then in a separate bowl, mix powdered sugar and water together. Once cookies have cooked, take the melted chocolate and spread a line across his chest for his bandolier. Then dot eyes and nose with chocolate. Then with the powder sugar mixture dot three dots on his bandolier. Let dry.
