Low carb diets can be so hard. My husband and I have been doing pretty well on ours but there are a few things that you truly miss. One is Bread! Oh, a nice French bread toasted with garlic, or a bread bowl with your favorite soup. Sounds delightful, doesn’t it? Well, if you are sticking to your low carb diet, better luck next time on being able to eat any of those. Now granted, we do allow ourselves cheat days occasionally, but bread is still a craving that is hard to do without. While doing some research on eating low carb, I ran across cloud bread. So, my hubby and I gave it a try. I ended up making it not only low carb and gluten free but also lactose free. It totally helped with the cravings for bread or sandwiches. I made us a grilled cheese the first day and it was fantastic! So check out the recipe below, and try it for yourself.
Cloud Bread
Prep Time: 15 mins
Cook Time: 35 mins
Total time: 50 mins
Yield: 10 bun halves
Ingredients:
- 3 Eggs, separated
- 3 Tbsp of Lactaid Cottage Cheese
- 1/4 tsp of Cream of Tartar
- 1/4 tsp of Agave
Directions:
Preheat oven to 300 degrees. Grease two cookie sheets or use parchment paper to line each cookie sheet.
Separate the eggs. There must be no yolk in the whites.
In a small bowl, mix together the egg yolk, Lactaid cottage cheese, and agave, until smooth.
Combine cream of tartar and egg whites in a bowl of a standing mixer. Beat the whites on high speed until fluffy white peaks form. Carefully, fold the egg yolk mixture into the egg whites until mixed. Try to keep the fluffiness of the egg whites.
Using a large spoon, spoon the mixture into 10 even rounds on the cookie sheets. Each round is about 3/4in thick and 4-5in wide. Bake on the middle rack for 25-35 mins. Cook time can vary. Bake until each round is golden brown. Remove rounds from pan to cool.
Once cooled, enjoy or store in a Tupperware.
