Lactose Free Mac n’ Cheese

When you discover you’re lactose intolerant, some of your favorite dishes can be missed. My husband is lactose intolerant and I try my best to substitute and create similar tastes of his favorite meals. Thank goodness for more awareness of lactose intolerance, this way I am able to find most lactose free items at my local grocery store. One of my hubby’s favorite meals is Mac n’ Cheese. This recipe is pretty quick to make and tastes almost exactly like the real thing. Give it a try and you’ll find cooking lactose free is pretty simple and delicious.

Lactose Free Mac n’ Cheese

Cook Time: 20 mins

Serves 4-6

Ingredients

3 Cups of Macaroni noodles

1 stick of soy butter

1/4 cup of flour

2 1/4 cups of Lactaid Milk

1 tsp of dry mustard

1 egg

1/2 tsp of salt

1/4 tsp of black pepper

1 lb of Go Veggie! Lactose Free Cheddar Cheese 

Directions:

In a 3 quart pot, bring 8 cups of water to a boil. Add macaroni noodles and cook 8-10 mins. Macaroni noodles should be slightly firm. Drain and set aside. 

In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly.  Add the milk and mustard and whisk until smooth. Cook until the mixture thickens, about 5 minutes. Reduce the heat to low.

Take 1/4 cup of the mixture and slowly pour it into the beaten egg, whisking constantly to avoid cooking the egg. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add the salt and pepper.
Add the drained macaroni noodles and stir until combined. Serve!
