Fall is here! My favorite season. I love the crisp smell in the air, leaves changing and the excitement of the holidays just around the corner. But most of all Pumpkin!

Brrr!!! Snow has come again to the Northwest. Don’t get me wrong, I love it! Being from the south, I get quite excited when it snows. It’s perfect opportunity to make soup as well.

I love Thai food. Seafood Pad Thai or Tofu Pad Thai is one of my all time favorites. Only problem….most low carb diets don’t include Pad thai. I have found a solution though.

My low carb diet is going well but every once in a while, I truly want something sweet. And surprise! Most sweet things that taste good have a ton of carbs.

This year I started my diet as soon as the New Year hit. I have been doing pretty good on watching what I eat, portions, and a steady exercise regime. My meals have been pretty easy to stay on target but my snacking has been a mental struggle to not eat something unhealthy.
