Pumpkin Chocolate Chip Cookies

Who doesn’t love a good chocolate chip cookie? My family sure does, and since it’s fall, I thought I would add a twist to our chocolate chip cookies by adding a bit of pumpkin. These cookies take hardly any time to make, and they will satisfy anyone’s sweet tooth.

Pumpkin Chocolate Chip Cookies

Cook Time: 12-15 mins
Total Time: 25 mins
Yield: 2 Dozen

Ingredients:

  • 1/2 cup butter, melted
  • 1/4 cup dark brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 6 Tbsp pumpkin purée
  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together the melted butter, brown sugar, and sugar until well combined.
  3. Add the egg, vanilla extract, and pumpkin purée, and whisk until smooth.
  4. In a large bowl, mix together the flour, salt, baking powder, baking soda, cinnamon, and ginger.
  5. Pour the wet ingredients into the dry ingredients and mix with a rubber spatula until combined. The dough will be soft.
  6. Fold in the semi-sweet chocolate chips.
  7. Roll the dough into balls and place them on a greased baking sheet. Slightly flatten the dough balls.
  8. Bake for 12-15 minutes. Let the cookies cool on the baking sheet for 10 minutes before transferring to a cooling rack.
