Low Carb Savory Spaghetti

Low carb diets can be an issue when you are craving Italian food sometimes. With this simple recipe, not only is it low carb and gluten free, but it will satisfy any craving for spaghetti. This tasty creation of veggies and Italian Sausage help bring this dish together. I also whipped up a scrumptious batch of Garlic Parmesan Cloud Bread because I don’t how you can eat spaghetti without bread! Savory Spaghetti

Prep time: 15 mins

Cook Time: 1 hour

Total Time: 1 h 15 mins

Ingredients

1 medium Spaghetti Squash

3 Tbsp of Olive Oil

1 lb of Italian Sausage

1 medium onion, diced

1 medium green pepper, diced

1 carrot, grated

1 jar of Prego Traditional

1 can of diced tomatoes with green chiles (15 oz)

1 can of tomato paste (4 oz)

2 Tbsp of basil

1 tsp of thyme

1/2 tsp of oregano

2 Tbsp of parsley

1 bay leaf

5 cloves of garlic

1 tsp of salt

6 baby bella mushrooms, diced

10 black olives, diced

3 oz of sliced pepperoni

1/4 of red wine

2 tsp of brown sugar

Directions:

Preheat oven to 425 degrees. Cut spaghetti squash in half and remove pulp and seeds. Place squash in 9 x 13 greased baking dish. Drizzle with olive oil and salt to taste. Place squash face down in dish, then bake for 40 mins.

In a large pot on medium high heat, add olive oil and brown Italian Sausage. Add diced onion and green pepper, sauté. Add carrots, Prego sauce, diced tomatoes, tomato paste, basil, thyme, oregano, parsley, bay leaf, garlic, salt, mushrooms, olives, pepperoni, red wine, and brown sugar. Simmer on low heat for 1 h for sauce to thickening.

Serve sauce atop spaghetti squash and sprinkle with Parmesan cheese to taste.

Garlic Parmesan Cloud Bread

Prep Time: 10 mins

Cook Time: 30 mins

Total Time: 40 mins

Servings: 12 rounds

Ingredients:

3 eggs, separated

1/4 tsp of cream of tartar

3 Tbsp of sour cream

1 tsp of garlic

3 Tbsp of Parmesan cheese

Directions:

Preheat oven to 300 degrees. Line a cookie sheet with parchment paper.

In a large bowl, add egg whites and cream of tartar. Beat egg whites until light and fluffy with soft peaks. Scramble egg yolks with sour cream, garlic, and Parmesan cheese. Fold in egg yolk mixture into egg whites. Dollop mixture onto lined cookie sheet. Sprinkle Parmesan cheese atop each round. Bake for 30 mins or until golden brown.

Serve on the side with Savory Spaghetti!
