Snowy Days Vegetable Beef Stew

Well up here in the Northwest, snow just covered the entire valley. Winter and snow just screams soup weather to me. I know everyone runs to the store for bread and milk, but pick up these few ingredients for this recipe and you will be staying healthy and warm for a couple of days. To me a great bowl of soup, warms the soul on a wintry day. I received an InstaPot for Christmas. And let me tell you, I am hooked! Never cooked things so fast. This beef stew calls for Chicken Broth and I know your thinking this lady is crazy but I tell you what it makes the flavor even better. Also, helps soothe little ones with a cold, if you have any in your household like I do. The ingredients are very minimal and cooks super fast. You can cook this recipe in a crockpot as well, but just would take a few hours longer.

Snowy Days Vegetable Beef Stew

Prep Time: 5 mins

Cook Time: 20 mins

Total Time: 40 mins (This time includes the time it takes for the InstaPot to heat and pressurize)

Ingredients:

1 lb of Stew Meat

1 bag of frozen peas and carrots

1 bag of frozen cut green beans

1 bag of frozen chopped kale

2 cans of chicken broth

1 tbsp of rosemary

6 cloves of garlic

1 1/2 tbsp of chili powder

1/2 tsp of pepper

1-2 bay leaves

Directions:

Dump all of the ingredients into your InstaPot. Set your InstaPot on pressure cooker normal for 20 mins. Shut the lid and let it do it’s thing.

Once it’s done let the pressure out naturally or use your quick release valve.
