Pumpkin Sweet Biscuits

As you know from reading my blogs, I am a pumpkin fanatic! These sweet biscuits are easy to make and a delicious sweet treat to get you in the fall spirit. They are light and fluffy with a hint of sweetness to curve any sweet tooth cravings. My boys had a blast making them and are simple enough to have your kids help make them with you.

Pumpkin Sweet Biscuits

Prep Time: 10 minutes

Cook Time: 25 mins

Total Time: 35 mins

Yield: 18-22 Biscuits

Ingredients:

1 pkg of Sugar Cookie Mix

1/4 cup of Softened Butter

1 tbsp of Water

1/4 cup of Coconut Milk

1/2 cup of Pumpkin Purée

1/4 tsp of Baking Soda

2/3 cup of All-Purpose Flour

2 tbsp of Sugar

Directions:

Preheat oven to 375 degrees. Line baking sheet with parchment paper. Set aside.

In a large bowl, mix together sugar cookie mix, butter, water, coconut milk, pumpkin purée, baking soda, flour and sugar. Once well combined, use a cookie scooper to dollop onto parchment paper.

For a fun Halloween Flare, add candy eyeballs to make “Monster Biscuits.”

Place in oven to bake for 20-25 mins or until tops are golden brown. Let cool 5 mins. Serve!
