Chocolate Chip Cloud Cookies

My low carb diet is going well but every once in a while, I truly want something sweet. And surprise! Most sweet things that taste good have a ton of carbs. I have been making cloud bread lately for a bread substitute which has been fantastic! I also use it as my crust for my quiches. I was playing with a few ingredients in the kitchen while making cloud bread last time and decided to try making cookies. I added a couple ingredients to give it some sweetness and viola… low carb cookies. Check out the recipe below and try them for yourself!

Chocolate Chip Cloud Cookies

Prep Time: 15 mins

Cook Time: 30 mins

Total Time: 45 mins

Yield: About 20 cookies

Ingredients:

3 eggs

1/4 tsp of cream of tartar

3 Tbsp of dairy free cream cheese

1 tsp of vanilla extract

2 Tbsp of Sugar-free French Vanilla creamer

1/3 cup of dairy free chocolate chips

Directions:

Preheat oven to 300 degrees. Line baking sheet with parchment paper.

In a large bowl, separate egg whites from yolks. Add cream of tartar to egg whites and beat on high until soft peaks form.

In a medium bowl, beat egg yolks, cream cheese, vanilla and creamer. Gently fold in egg yolk mixture into egg whites once egg whites are fluffy. Fold in chocolate chips. Using cookie scoop, dollop on parchment paper.

Bake for 30 mins or until golden brown on top. Let cool for 5 mins.
