This year I started my diet as soon as the New Year hit. I have been doing pretty good on watching what I eat, portions, and a steady exercise regime. My meals have been pretty easy to stay on target but my snacking has been a mental struggle to not eat something unhealthy. I have been eating baby carrots and celery sticks, which is great! But can get old real fast. I used to make sausage balls for a quick snack before I started my diet but flour is quite high in carbs especially a full cup of it in a recipe. This got me thinking. Why don’t I try to make them with coconut flour and then I can have a high protein snack that is filling and low carb. And turns out it worked! Low Carb Sausage Balls
Prep Time: 10 mins
Cook Time: 30 mins
Total Time: 40 mins
Yield: About 30
Ingredients:
1 1/2lbs of ground sausage
1 cup of sharp cheddar cheese
1 egg
3/4 tsp of baking powder
3/8 cup of coconut flour
Directions:
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
In a large mixing bowl, add sausage, cheese, eggs, baking powder, and coconut flour. Mix until well combined.
Roll into 1″ balls and place on lined baking sheet. Bake in oven 25-30 mins or until golden brown. Let cool for 5 mins. Serve!
