Spicy BBQ Beef Ribs

Living in the Northwest, there are not many choices for authentic Southern BBQ. So for New Years, I figured I would treat myself to some good ole BBQ Ribs. I enjoy making ribs on the grill, but let’s face it, it’s been snowing, icy and plain cold lately. I opted for the slow cooker this time of year due to the weather. I make my own BBQ sauce in the slow cooker too.

Let’s bring in the New Year with a little southern pizzaz, easy cooking, and more time for relaxation and celebration. But from one southern girl to another, don’t forget your black-eyed peas and greens for good luck!

Slow Cooker BBQ Beef Ribs

Prep Time: 15 mins

Cook Time: 8 hours

Total Time: 8 h 15 mins

Ingredients:

1 cup of ketchup

1 – 6oz can of tomato paste

3/4 cup of brown sugar, packed

1/2 cup of vinegar

1/4 cup of Jalapeño sauce

2 Tbsp of mustard

1/2 tsp of garlic powder

2 tsp of chili powder

1 Tbsp of salt

1/2 tsp of pepper

2lbs of Beef Ribs

Directions:

Turn your slow cooker on low. Add ketchup, tomato paste, brown sugar, vinegar, Jalapeño sauce, mustard, garlic powder, chili powder, salt, and pepper. Whisk together in slow cooker until sugar and salt are dissolved. Add Ribs to slow cooker, and toss in sauce.

Cover. Keep slow cooker on low and cook for 8 hours. Once fully cooked, take Ribs out of sauce, keep some of the remaining sauce to dip Ribs in.

You will have a delight for dinner and it took hardly anytime to prepare. Enjoy with your favorite beer or red wine! Cheers to the New Year!
