Who wants to cook all evening long after a long days work? Um…not me! Being a mom of two boys, that is the last thing I want to do. Only time I want to spend in the kitchen is when I’m baking with my boys. When I’m looking for recipes, I normally stick to quick and easy. Another plus is low carb. Only having to clean one pan…ABSOLUTELY!
Most days I want to spend the evening crafting, coloring, putting puzzles together, or baking with my boys. These one pan meals truly help me be able to have the time to spend with them rather than in the kitchen. Grab your apron! One Pan Pesto Chicken
Prep Time: 10 mins
Cook Time: 40 mins
Total Time: 50 mins
Servings: 6 servings
Ingredients:
1 lb of Boneless Chicken Breasts
1 bunch of Asparagus
10-15 Cherry Tomatoes
2 Tbsp of Olive Oil
3 Tbsp of Pesto
Directions:
Preheat oven to 425 degrees. Line baking sheet with aluminum foil and spray pan with cooking spray.
Place Chicken breasts in the middle of the pan. Brush Pesto over chicken breast.
Chop ends off of Asparagus. Halve Cherry Tomatoes. Spread out Asparagus and Tomatoes evenly on each side of Chicken Breast. Drizzle Olive Oil over Asparagus and Tomatoes.
Bake for 40 mins. Let cool for 5 mins. Enjoy!
