Bacon Roasted Pumpkin Seeds

Pumpkins, pumpkin pie, pumpkin seeds! Need I say more!?! One of my favorite low carb snacks  are pumpkin seeds. So when my boys were obsessed with carving so many pumpkins this fall, I decided not to let the pumpkins seeds go to waste. This a very simple recipe and even my three year old loved eating them. Which to me, being a mom of a picky eater, is a mommy win! So let’s gear up to roast some pumpkin seeds!

Bacon Roasted Pumpkin Seeds

Prep Time: 5 mins

Cook Time: 1 h 10 mins

Total Time: 1 h 15 mins

Serving: 2 cups

Ingredients:

2 cups of Pumpkin Seeds

8 cups of water

1/2 tsp of salt

4 slices of thick cut bacon

Directions:

Preheat oven to 375 degrees.

In a large pot, bring water and salt to boil. Add in Pumpkin Seeds, then boil for 10 mins.

Drain water from pumpkin seeds.

Place parchment paper on baking sheet. Spread out pumpkins seeds onto baking sheet. Cut the 4 slices of bacon into 1/2 inch pieces and spread onto baking sheet. Salt to taste.

Place in oven for 1 hour or until golden brown. Stir seeds every 15 minutes while in the oven.
