Sometimes I crave breakfast for dinner. So I whipped this up the other day and satisfied my breakfast craving. It’s quick and easy to throw together.
Hashbrown Casserole
Prep Time: 15 mins
Cook Time: 40 mins
Total Time: 55 mins
Ingredients:
5 red potatoes, grated
1 lb of ground sausage
5 eggs
1 cup of creamer
1/2 tsp of thyme
1/2 tsp of oregano
1/2 tsp of rosemary
2 Tbsp of minced garlic
1 cup of shredded Parmesan
1 cup of mushroom, diced
1 cup of onion, diced
Salt & Pepper to taste
Directions:
Preheat oven to 400 degrees F. Grate the red potatoes. Brown the ground sausage in a skillet over medium heat.
In a small bowl, whisk the eggs and creamer together. Set aside.
In a large bowl, mix potatoes, sausage, egg mixture, oregano, thyme, rosemary, garlic, parmesan, mushroom, onion, salt and pepper with a rubber spatula until well combined. Pour into a greased 9×13 casserole dish. Bake for 40 mins. Top with extra parmesan, if desired.
