Mom On-The-Go Chicken Fajitas

Are you always on the run? Easy dinners make your life easier? Love Mexican Food? Well these Chicken Fajitas are for you. I am always looking for easy, fast, and delicious recipes. I work a full time job, have a 15 mo old little boy at home, and don’t always have time to cook a healthy meal. I didn’t think these would turn out as amazing as they did at first. And talk about almost no prep time. Check it out, you’ll be shocked at how tasty these fajitas turn out.

Chicken Fajitas

Prep Time: 15 minutes

Yield: About 9 fajitas
Ingredients
2 lbs boneless skinless chicken breast halves
1 (14.5 oz) can petite diced tomatoes with green chilies

1 red and green bell pepper, sliced

1 large red onion, sliced

4 cloves garlic, minced

1 Fajita Seasoning Packet 

2 Tbsp fresh lime juice

1 Cup of Water

For Serving:

Flour or corn tortillas, sour cream, cilantro, salsa, guacamole, jalapeños, or cheddar cheese

Directions

Pour canned tomatoes into the slow cooker and spread into an even layer. Top with half of the peppers and half of the onions. Sprinkle garlic. Place Chicken Breasts in crockpot. 

In a bowl whisk together seasoning packet, water, and lime juice. Evenly sprinkle half of the seasoning over chicken breasts then flip chicken and sprinkle in remainder. Top with remaining half of the tomatoes, then layer in remaining peppers and onions.

Cover and cook on HIGH heat 3 – 4 hours or low heat 6 – 8 hours, until chicken has cooked through and veggies are tender.

Remove chicken, and cut into strips, or shred. Serve warm in warmed tortillas with sour cream, guacamole, cheese, jalapeños, or salsa.
